Artichoke Pesto

This is an unusual but delicious alternative to regular basil pesto which is used in many recipes. he artichokes give it a nice bite and teamed with the rich flavour of roasted hazelnuts, this recipe will be sure to become a family favourite.

Artichoke Pesto

Ingredients

  • 2 Tbsp roasted hazelnuts
  • 1 can artichoke hearts, drained
  • 1 clove chopped garlic
  • ¼ cup grated parmesan
  • ¼ cup olive oil
  • Salt and pepper

Method

  • In a blender, process the nuts until finely chopped.
  • Add the remaining ingredients and blend until well combined.
