Creamy Rosemary Garlic Potatoes

Dress any meal up with this delicious old-time favourite. Potatoes are always a popular vegetable and teamed with garlic and rosemary is irresistible. This rich and tasty dish is very easy to prepare and is delicious served with anything from a salad and crusty bread to homemade veggie pie.

Creamy Rosemary Garlic Potatoes

Ingredients

  • Approx. 1 kg potatoes, (enough to fill a large baking dish) sliced very thinly
  • 300g pouring cream
  • 2 cloves garlic
  • 2 tablespoons fresh rosemary, chopped
  • 1-2 teaspoons salt

Method

  • Preheat the oven to moderate – 180ºC (350ºF)
  • Layer potato slices in baking dish.
  • Combine cream, garlic and rosemary.
  • Pour over potato slices.
  • Sprinkle with salt.
  • Cover with foil and bake for approximately 1 hour.
  • Remove foil and bake an extra 20 minutes until brown and crispy.
