Oregano Cheese Damper

This good old Aussie damper has the extra flavours of oregano and cheese to give it more of a zing and as half the flour is wholemeal it has the added benefit of extra fibre. Because there is no yeast in damper bread, it is easy to prepare and can be whipped up in a matter of minutes. It is the perfect bread to serve at a vegetarian BBQ or with a hearty soup. Another option would be to leave out the cheese and oregano and serve it out old fashioned “Aussie style”, with butter and golden syrup, YUM!

Ingredients

  • 1 cup whole meal self-raising flour
  • 1 cup white self-raising flour
  • 60g butter
  • ¼ cup chopped fresh oregano
  • ¾ cup milk
  • 1 cup grated cheese
  • ¼ cup water, approximately
  • 1 tablespoon milk extra
  • 1 tablespoon grated cheese extra

Method

  • Sift flours in large bowl
  • Rub butter into flour until it resembles fine bread crumbs
  • Add grated cheese
  • Make well in centre
  • Add milk and enough water to mix into a sticky dough
  • Turn dough onto lightly floured surface
  • Knead lightly until smooth
  • Shape into a round
  • Place onto greased oven tray
  • Pat dough out to approx. 2 cm thick and 20cm diameter
  • Using sharp knife, mark into wedges about 1cm deep
  • Brush top with extra milk
  • Sprinkle with extra cheese
  • Bake in moderately hot oven for about 25 minutes or until lightly browned
