Sweet Potato and Leek Loaf with Crumble Topping
Not only is this loaf absolutely delicious, but it is packed full of healthy ingredients. Sweet potatoes are a rich source of vitamin A and C and leeks provide potassium, folic acid, as well as vitamin C. Garlic is well known for warding off colds and flu and wheat germ apart from keeping you regular is a nutritious super food, rich in vitamin B complex, vitamin E, enzymes, minerals and more. Loaf

Ingredients
- 2 tablespoons olive oil
- 1 bunch leeks, sliced
- 3 cloves garlic, crushed
- 5 medium sweet potatoes
- 125g cream cheese (light can be substituted)
- ½ teaspoon salt
- 1 teaspoon ground coriander
- 1 teaspoon nutmeg
Method
- Sauté the leeks and garlic in oil until soft
- Steam or boil the sweet potatoes until tender, then mash with the cream cheese
- Mix all the loaf ingredients together and spoon into a large oiled casserole dish
Topping
Ingredients
- 1 cup wheatgerm
- 1 cup wholemeal flour
- ½ teaspoon coriander
- ½ teaspoon cumin
- ¾ cup butter
- Pinch salt
Method
- Mix together all the dry ingredients and rub in the butter until the mixture is crumbly
- Sprinkle topping over the sweet potato and leek loaf
- Bake at 180 deg for about 40 minutes until the top is golden brown
- Serves 6-8
