Sweet Potato and Leek Loaf with Crumble Topping

Not only is this loaf absolutely delicious, but it is packed full of healthy ingredients. Sweet potatoes are a rich source of vitamin A and C and leeks provide potassium, folic acid, as well as vitamin C. Loaf

Sweet Potato and Leek Loaf

Ingredients

  • 2 tablespoons olive oil
  • 1 bunch leeks, sliced
  • 3 cloves garlic, crushed
  • 5 medium sweet potatoes
  • 125g cream cheese (light can be substituted)
  • ½ teaspoon salt
  • 1 teaspoon ground coriander
  • 1 teaspoon nutmeg

Method

  • Sauté the leeks and garlic in oil until soft
  • Steam or boil the sweet potatoes until tender, then mash with the cream cheese
  • Mix all the loaf ingredients together and spoon into a large oiled casserole dish

Topping

Ingredients

  • 1 cup wheatgerm
  • 1 cup wholemeal flour
  • ½ teaspoon coriander
  • ½ teaspoon cumin
  • ¾ cup butter
  • Pinch salt

Method

  • Mix together all the dry ingredients and rub in the butter until the mixture is crumbly
  • Sprinkle topping over the sweet potato and leek loaf
  • Bake at 180 deg for about 40 minutes until the top is golden brown
  • Serves 6-8
